Also, if you like battered things, you can make a batter with eggs and coconut flour and just dip fish or chicken or whatever in and fry very gently - it's amaaaaaaaazing!

I don't think we can do it tbh. Not purely! It is too daunting! I have decided what I am gonna do is cut all simple carbs (starches and sugar mostly) as they are the most widely known contributors to thrush and adhd symptoms. I have read so many varying diet suggestions but most have that in common. Then I got focused on the wheat thing and forgot i NEED to cut simple carbs, too. So i need to start with this first and if there is improvement, awesome! If not then we cut gluten. TBH we have managed with hunter so far and he is developing well so it isn't an immediate problem. Just one I would like managed by the time he is school aged (even if we homeschool, he needs greater concentration) so we have plenty of time to find what works and what doesn't. And as i have only seen the problem with sugar, thats first cut. (And white starches that act as sugar.) baby steps!
